Phantasma is a collab with our dear friends from FreeStyle Hops in New Zealand and thanks to them we've been able to try out a range of new products and techniques. The logic behind this beer was to make available as many thiol precursors during the brewing process as possible so that later a suitable yeast could convert them and release the aromatic compounds associated with them. For that purpose we did mash hopping with Motueka, used Super Sauvin (blend of Nelson Sauvin and Phantasm™) in the whirlpool and in biotransformation and used a strain of yeast capable of converting thiol precursors. We dry hopped the beer with Motueka and before packaging we introduced Nelson Sauvin SubZero Hop Kief™ and Motueka SubZero Hop Kief™! Liquid science…
